Jill's Homemade Salsa

My friend Jill is an excellent chef. This homemade salsa recipe of hers make enough to share around with your friends. I made it this week and used it with my Black Beans, Yellow Rice and Kielbasa recipe.



Ingredients:

Tomatoes (maybe 6)

1 Large Yellow Onion

2 Poblano Peppers mostly seeded (add more if you prefer it spicier)

2 Cloves of Garlic

1 Lime

Salt

Fresh Cilantro




Grill the tomatoes, onion, peppers and garlic. Jill does this using her Big Green Egg which gives the salsa a more distinct flavor. I don't have a BGE so I just do mine in the oven. Once they are grilled and slightly cooled, put them in a blender. Squeeze the lime juice into the mixture and add salt and fresh cilantro. Blend thoroughly.


That's it! So Simple and delicious!
